Caramel Apple Overnight Oats

We know that breakfast is the most important meal of the day because we are breaking our fasting and providing our bodies with the nutrients that it needs to get the day started. Most of us want to eat a healthy breakfast, but when we are rushing out the door in the morning many times we don’t have time to eat as healthy as we would like for breakfast. Here is a good solution to having a healthy breakfast that can be prepped the night before, making your morning easier.


First, let’s make the caramel sauce. It’s very easy, but you will most likely need a high-speed blender. If you don’t have one, you will need to use much more of your favorite milk, plant-based or regular, just know that the consistency will be thinner. You can also use date paste and thin it down with creamer/milk to the consistency that you like.


Caramel Sauce


Prep time: 10 minutes Serves: 4


Ingredients:


1/3 cup of favorite creamer or favorite milk

A pinch of salt


Directions for Caramel Sauce:

  1. Place pitted dates, creamer, and salt in a high-speed blender.

  2. Blend until silky smooth. If your blender has a tamper you may wish to use it.

  3. Add more creamer if you want a thinner consistency.

  4. Place in an air-tight container and store in the fridge for up to 7 days.

This is enough for 4 servings of your overnight oats unless you like it sweeter.

This makes a wonderful caramel dip if you want to eat this with apple slices. No matter how you use this caramel sauce it will be oh-so-good!




Caramel Apple Overnight Oats



Prep time: 5 minutes Serves: 1


Ingredients: 6 oz of rolled oats 1 1/2 c. favorite milk, plant-based or regular

1 apple, diced

1/4 cup of the caramel sauce, divided in 2

A small handful of Walnuts, or nuts of your choice (optional)

Salt to taste

Directions:

  1. Place oats in a quart jar, wide mouth works great.

  2. Add any salt you might want to add.

  3. Add 1/2 of the caramel sauce, about 1/8 cup.

  4. Slowly add a little of the milk to the jar at a time. Stir often to make sure that the Caramel sauce is blended well.

  5. Finish by adding milk to the fill line on the jar. Give a final gentle stir to make sure that the milk can reach throughout the jar including the bottom of the jar.

  6. Put a lid on the jar and store it in the fridge until you are ready to eat.

  7. In the morning when you are ready to eat, add the diced apple, nuts (optional), and the rest of the caramel sauce


Here are several tips for making this and speeding up your morning.


Tip #1: Make up several batches of the recipe in advance. It doesn’t take up a lot of extra time to make 1 batch vs 4 batches. They can sit in the fridge for up to 7 days and you can use them when you are ready.


Tip #2: The longer each jar sits in the fridge the sweeter the oats get.


Tip #3: If you make up each batch in a pint jar you don’t need to measure anything. There are markings on the side of the jar that show the 6 oz mark.


Tip #4: This is an easy recipe that you can make with your kids. If they are 10 or older they should be able to make this on their own with minimal help if the caramel sauce is made in advance. By getting them involved in making this, they will look forward to a yummy breakfast and you will be happy that it was healthy. Win! Win!
