On hot summer days, there is nothing better for cooling off in the afternoon heat than with this tasty surprise.
I have to give my husband credit for this lovely taste of summer. We usually buy large bags of frozen strawberries and sometimes he will whip these up at night. I love it when he makes these.
This fresh and fruity homemade daiquiri recipe eliminates the need for sugary prepared mixes full of artificial colors and flavors. With just a few ingredients and your blender, you’ll be sipping a delicious frozen drink before you know it.
We usually make this with honey but if you don’t use honey there are several options for you. You can use a simple syrup. You can do this with regular sugar or if you don’t want refined white sugar you can use monk fruit sweetener.
We also use regular lemon-lime soda like Sprite or Seven-Up. You can use whatever soda you prefer or use club soda.
Please Note: Simple syrup is normally prepared using a 1:1 ratio of refined white sugar to water. In general, monk fruit sweetener is considered a 1:1 replacement for sugar, but in this case, a 1:2 ratio (one-part sweetener to two-parts water) works well without being overly sweet.

Strawberry Daiquiri Mocktail
Ingredients
Sugar-Free Simple Syrup:
¼ c. powdered monk fruit sweetener
½ c. water
Daiquiri Ingredients:
2½ c. frozen strawberries, hulled (you can use fresh as well) ¼ c. fresh lime juice 1/4 cup sweetener (honey or simple syrup) 4 oz. lemon-lime soda (Sprite, Seven-Up, your favorite lemon-lime soda) 6-8 large ice cubes
Garnish: lime wheels and/or fresh strawberries
Directions
Prepare the simple syrup by combining the monk fruit sweetener (or sugar) and water in a small saucepan. Stir to combine and heat until the sweetener dissolves completely, approximately 3-4 minutes. Remove from heat and set aside too cool. If you are making your syrup with refined white sugar do the same thing but keep it a 1:1 ratio. (See note above)
Place the strawberries, lime juice, soda, and one-quarter cup of simple syrup into a blender and blend until smooth.
While the blender is still running, add the ice a little at a time until thoroughly combined. Turn the blender off and remove the lid. Taste and add additional simple syrup, if desired, and blend for another 30 seconds to combine.
Check the consistency. Add more soda if needed for a thinner daiquiri.
To serve, pour into glasses and serve immediately garnished with lime wheels and/or whole strawberries. Enjoy!
