Are you needing to use some of those beautiful tomatoes from your garden? Nothing can beat freshly picked tomatoes right out of the garden, well, except for maybe fresh homemade salsa.
This is the time of year when you have been eating garden fresh produce for a while now and if you are anything like me there comes a point that you don’t want to see another tomato, a least for a few days. Making homemade salsa is a great way to kick it up a notch, use those tomatoes, and create a yummy salsa that is always a hit. It’s quick and easy to make so whip it up anytime and watch it disappear.
Quick and Fresh Homemade Salsa
Prep time: 15 minutes Cook time: n/a Serves: 2-4
Ingredients:
2 lbs. fresh tomatoes, divided ½ large jalapeño, seeded, divided ½ large white onion, divided ½ c. fresh cilantro, divided 2-3 large cloves of garlic, peeled ½ t. coarse sea salt 2-3 T. fresh lime juice
Directions:
Divide the tomatoes, jalapeño, onion, and cilantro equally into two groups.
Roughly chop one group and add to a high-powered blender or food processor, along with the garlic. Sprinkle with sea salt and pulse until the tomatoes, jalapeño, onion, cilantro, and garlic are thoroughly combined, but not completely liquified. Transfer to a large, non-reactive bowl and set aside.
Finely dice the remaining tomatoes, jalapeño, onion, and cilantro, and add to the bowl with the tomato mixture. Add the fresh lime juice and stir to combine. Taste and add additional salt and fresh lime juice, if desired.
Serve immediately or cover and refrigerator overnight to allow the flavors to mingle.
Please note: I like to dice my tomatoes and then put them in a colander so that they can drain for a few minutes before I use them. This is especially true of garden fresh tomatoes because their water content is usually quite higher than wintertime store-bought tomatoes.
