Ditch the soda and cool off this summer with this fruity and refreshing Dark Cherry Fizz that isn’t overly sweet thanks to the natural tartness of the cherries and fresh lime juice. A touch of honey adds just the right amount of sweetness to balance out the more tart flavors, while fresh mint adds a bright note to bring it all together.
This drink is perfect for sipping while sitting around the pool watching the kids, for a moment of self-care, or even while you are on the go. It’s a great alternative to sugary soda and there is no alcohol so your kids can enjoy it while getting a serving of fruit. What’s not to love?
This is made with honey so it doesn’t have refined sugar. If you don’t like using honey you can use maple syrup, coconut sugar, or anything that will dissolve in warm water. Yes, you can absolutely use refined white sugar if that is what you normally use as a sweetener.
Dark Cherry Fizz
Prep time: 20 minutes Cook time: 5 minutes Serves: 4
Ingredients:
2 c. dark cherries, pitted (fresh or frozen) 2 T. Honey or sweetener of your choice 1 c. water
¼ c. fresh lime juice 1 c. fresh mint leaves, washed, patted dry, and torn
2 c. club soda
Directions:
Combine dark cherries, honey, and water in a small saucepan and place over medium heat. Cook, stirring frequently, for 4-5 minutes or until the mixture is hot and bubbly and the cherries release their juices.
Remove from heat, transfer the dark cherry mixture to a blender or food processor, and blend until smooth. Pour into a small pitcher and let cool at room temperature for 10-15 minutes.
Add lime juice and mint leaves and stir to combine. Place in the refrigerator until ready to serve.
To serve, fill four serving glasses with ice and add ¼ cup dark cherry mixture, and ½ cup club soda to each glass. Stir gently to blend and serve immediately.
