Yummy Avocado Green Goddess Quinoa Salad that is Perfect for Summer

salad with cherry tomatoes and parsley
Enjoy summer with this yummy Avocado Green Goddess Quinoa Salad.

Quinoa salads are perfect for summer because they provide a light meal in hot weather when you might not feel like eating much. Quinoa is also a good source of plant-based protein. It is also very versatile, there are just so many things you can do with it. That is why this Avocado Green Goddess Quinoa Salad is such a great option when you need a quick meal.

Another great benefit of quinoa is that you can make a large quantity, store the amount you will use for the next few days in the fridge, and freeze the rest. I do this every time I make quinoa. Just pull a bag out of the freezer the night before you want to use it, place it in the fridge to defrost, and the next day it is ready for a quick meal. It is simple and easy, just the way I like my meal preps.

So, if you like everything so far, you will love this recipe. Not only is this a light meal with plant-based protein, but it is also quick and easy. If you have already made the quinoa, you won’t even need to turn on your hot stove. Sound good?
